When you see the recipe you will laugh, knowing that I had to call and email sarah at least 6 times over the years for the recipe. You'd think I'd be able to remember it. Regardless, I've got it embedded in my memory now, and I'd love to share it with you.
It is a recipe that can be made in almost 2.5 seconds (well, maybe that is a stretch) but less than 10 for sure. It is wheat and dairy free, and is so delish you may actually want to lock them away some where so that you don't eat them all in one sitting.
This is a kid/adult baking pleasure. It is fast, the kids can help with everything and it isn't too messy.
It is also great if you are craving sweet things but don't have a stitch of junk food in your cupboard because they are so fast and easy to make.

Best Peanut Butter Cookies Ever Recipe:
1 cup peanut butter (crunchy or smooth, your call)
1 egg
1/2 cup of packed brown sugar
(optional: 1 cup of chocolate chips)
Directions:
Pre-heat oven to 325.
Mix ingredients until combined and dough is firm(ish). Shape into balls. I generally do the size of a golf ball. Place on un-greased cookie sheet. Press down with a fork.
Bake for 12-15 minutes.
Cool on a wire rack.
Don't eat all in one sitting or you will get a tummy ache.
