For those of you who want to try making your own granola at home, this recipe is a keeper.
Morningstar's Marvelous Granola: Sold under the guise of Groovy Granola!
5 cups rolled oats (not instant)1 cup unsweetened coconut1/4 cup whole flax seeds 1/4 cup grape seed oil1/2 cup warm water
1/2 - 1 cup brown sugar (I use one and it isn't too sweet)1 tbsp vanilla extract
1 cup almonds
1/4 cup raw cashews
1/4 cup sunflower seeds1/4 cup pepitas (pumpkin seeds)
- Mix the oat, flax and coconut in a large bowl.
- Measure water, oil, vanilla and brown sugar into into the measuring cup and stir it well before pouring into bowl.
- Toss everything together until evenly coated and then pour out into a baking pan or two. I use a cookie sheet with a lip.
- Bake at 300 degrees, turning it with a spatula every ten minutes or so until everything is golden brown.
- When it is finished cooking let it cool in the pan and then returned the baked granola to a clean, large mixing bowl and add left over ingredients.
- Place it in an air tight container. It stores well, but doesn't generally last for too long!
